After pizza dough kneading it’s time to start the pizza proofing. As I explain in my article, this is a critical part of the process and you need the right container to be successful.
I mainly use 4 food containers storage for the bulk proofing (for every pizza style): 1.1L (~39oz), 2.4L (~84oz) and 3.7L (~130oz). So you can bulk ferment from ~350gr to ~2Kg.

Measuring temperatures in kitchen is one of the most underestimated parts of cooking. Both pizza dough kneading and baking also require to take under control the temperature. The most versatile way to do so is using an IR temperature gun.
Ideally you want two thermometers: one infrared and one with a probe. The first to measure temperature of surfaces (included pizza stone) and the other for the dough. If two is too much, prioritize the IR.
